CULINARY ST JACOB’S WAY TRAIL 2011: PAZNAUN IN TYROL BRINGS MORE AWARD-WINNING CUISINE TO THE MOUNTAINS
10 July signals the starts of a superlative Summer of pleasure in Paznaun. The Culinary St. Jacob’s Way trail will be taking place for the third time and bringing award-winning cuisine to the mountains under the patronage of ‘Chef of the Century’ Eckart Witzigmann. Culinary flights of fancy are guaranteed when the following star chefs take to the kitchen at four specially selected Alpine Association huts: Marcello Leoni of Italy (Restaurant Leoni, Bologna), Dutch chef Niven Kunz (Restaurant Niven, Rijswijk), Belgian Alex Clevers (Restaurant Vivendum, Dilsen-Sokkem) and renowned TV chef Tim Mälzer from Germany (Restaurant Bullerei, Hamburg).
This high calibre line-up of star chefs, with their dishes promising to offer an explosion of flavours, is combined with the traditional flair of the Alpine huts high up in the mountains of Paznaun. During the mountain Summer in Paznaun, hikers and culinary enthusiasts can enjoy a unique combination of pleasures. Under the motto of ‘Culinary St. Jacob’s Way’, sustainable tourism, international star chefs, regional products and traditional mountain experiences are brought together to form this unique combination. Under the patronage of Eckart Witzigmann and coordinated by local hero Martin Sieberer (Trofana Royal, Ischgl), the four international star chefs & shooting stars of the cooking world have put together a menu of regional dishes and products which will be served all Summer long at four selected huts.
At the Jamtalhütte near Galtür, Tim Mälzer will be presenting guests with his “Tim Mälzer’s Boeuf Bourguignon of Paznaun Highland cattle with a wild herb salsa”, Marcello Leoni will be serving his dish “Tagliolini on a porcini mushrooms salad with Parmigiano Reggiano and tomato oil” at the Heidelberger Hütte (Ischgl), Alex Clevers will be impressing guests with his “Roast suckling pig with candied lemon, served with tomatoes, capers and vegetables in a sauce of Starkenberger beer and mountain herbs” at the Niederelbe Hütte near Kappl and Niven Kunz will impress gourmet enthusiasts with a “Braised veal cheeks with chateau-style carrots and a lemon and potato purée” at the Ascherhütte near See.
This enjoyable event will kick off on Sunday 10 July 2011 at all four huts at the same time, bringing gourmet pleasures to the entire Paznaun region across the resorts of Galtür, Ischgl, Kappl and See. The event starts with a walk to the relevant hut with the star chefs – hiking enthusiasts, gourmet fans and nature lovers will all be impressed.
The star chefs are taking on a new challenge with enthusiasm in order to present their high quality (and often re-interpreted) dishes at one of these Alpine huts. Following the return of the chefs to their home countries, the Alpine Association huts will continue to serve the dish of their star chef. This means that the Culinary St. Jacob’s Way trail can be explored and enjoyed all Summer long.
A hut party at the Heidelberger Hütte represents the crowning conclusion of the event on 18 September 2011 for a stylish and enjoyable end to the Culinary St. Jacob’s Way trail.
