Already since his ninth Onno Kokmeijer knew he wanted to be a cook. His father played an important role, as he taught Onno a lot about ingredients and cooking techniques. After he successfully finished culinary school, he gained a lot of experience in different restaurants. The culinary journey of Onno Kokmeijer at Ciel Bleu started in 2003, when he was asked to lead the restaurant. He immediately took Arjan Speelman as his right-hand man, since their friendship dates back to their college days, when they worked together during various traineeships. Executive Chef & Manager Onno Kokmeijer and Chef de Cuisine Arjan Speelman worked tirelessly to create a world-class dining experience, garnering their first Michelin star in 2005. Over the next few years, the desires of the hotel’s international guests became the basis for the kitchen and success continued, as the restaurant was awarded its second star in 2007. The team’s lofty ambitions and skills have helped inspire and nurture their peers, playing a vital part in the transformation of Amsterdam into the truly European culinary capital it is today.
