PAZNAUN IN TYROL: 2013 CEREMONIAL OPENING OF ”CULINARY WAY OF ST JAMES“ 2013

Paznaun in Tyrol now offers culinary delights the whole summer long in its mountain retreats. Last weekend saw the opening of the ”5th culinary Way of St James“ under the patronage of chef of the century Eckart Witzigmann. Four star chefs from Germany, Italy, Belgium and the Netherlands bring their dishes specially created from regional products for the Way of St James to the mountain lodges.

The 7th of July saw the ceremonial opening of the gourmet summer in the Paznaun Valley: under the patronage of Eckart Witzigmann, four international star chefs took over sponsorship of four Alpine Club lodges in the valley and created a dish for the respective summer menus. The chefs Otto Koch from Germany, Kristof Coppens from Belgium, Rik Jansma from the Netherlands and Gian Paolo Raschi from Italy were introduced on Friday at the gala evening at the Trofana Royal. There, the guests of local hero Martin Sieberer got a taste of the special treat that awaits them. On Saturday and Sunday, the star chefs showed that they are just as down to earth as the local Tyroleans when they hiked to the Jamtal lodge near Galtür along with the guests of the region. There they presented their dishes in the open air in brilliant sunshine and pampered their guests with samples.

And Eckart Witzigmann wasn’t going to miss this tasting session against the impressive backdrop of the mountain scenery. Along with the hikers, E-bikers, and mountain bikers, he got a taste of some new, surprising interpretations of regional specialties such as "peppered venison with breaded mushroom soufflé" by Otto Koch or "Ravioli with porcini mushrooms and ricotta in a Parmesan fondue" by Gian Paolo Raschi. "Nothing is nicer than getting first-class cuisine at the lodges after a nice long walk. What we are talking about is not gourmet cuisine in the classical sense but rather well-prepared, creative dishes made from local produce," says Eckart Witzigmann as he explains the concept of the "Culinary way of St James".
After the official part of the opening ceremony, all the star chefs went on to instruct the lodge managers in the preparation of the dishes developed and the dishes will continue to be offered as a highlight on the summer menu until 21 September 2013. Many hiking gourmets accepted the offer of the Tourist Association to take the original recipes back home with them. Those who missed the opening event, have the opportunity throughout the entire Alpine summer to create their own individual, Way of St James, based on their own taste and what shape they are in. The four walks lead to the Jamtal lodge near Galtür, the Heidelberger lodge near Ischgl, the Niederelbe lodge near Kappl and the Ascher lodge near See.

During the mountain summer in the Paznaun valley, the four gourmet walks can be booked as a package from the 7th of July to the 21st of September 2013: three nights in a category of choice with half board including four individual walks to the participating Alpine Club lodges with one overnight in a lodge plus all the benefits of the Silvretta Card All Inclusive costs from 159 Euro per person.
